Inside the pepper there is more then just couscous; we folded in garbanzo beans, dried currants, spinach, diced bell peppers and feta cheese. The filling is lightly seasoned with toasted cumin then baked until golden brown. The stuffed pepper is sweet, creamy and surprisingly fillings, we love the combination of the vegetables in it. What brings the pepper to a higher flavor level is the fresh creamy basil sauce made up of crème fraiche, basil, lemon juice, minced garlic, and olive oil. We paired our arugula salad with sliced strawberries, marcona almonds, green peas and parmesan cheese that is tossed in a champagne poppy seed vinaigrette with the stuffed pepper.
