Keep it simple! Nothing beats a roast chicken for lunch or dinner. We butter roast a chicken that sits a top of a medley of diced potatoes, bacon, carrots, mushrooms and pearl onions. We do this because as the chicken roasts it imparts the flavor on to the vegetables, therefore cooking the vegetables in chicken juices. This is a great meal to enjoy on a Sunday night while watching your favorite TV show.
