This roasted cod dish is rather deceiving. It is a very light dish, but the flavors combine to make you feel like this is a very hearty dish. The roasted piece of cod is topped with a sautéed mushroom and garlic sauce made of up sliced creminis, minced garlic, balsamic vinegar, butter, parsley and dry vermouth. This sauce is rich, elegant and compliments the meaty cod. Oh, and a side of roasted green beans accompanies the cod. A glass of wine maybe in order with this meal. Enjoy.
