This week we have fresh cod croquettes all ready to go home with you. Roasted cod is hand-flaked and combined with lemon zest, old bay, finely diced celery, minced onion, egg and bread crumbs. This cod mixture is then seasoned with thyme and parsley. Next patties are made out of the cod mixture, rolled in extra bread crumbs, then pan sautéed until golden brown. Serve these cod croquettes a top a bed of arugula, sliced pears, pancetta, and ricotta salata. Dress this salad with the bright champagne honey vinaigrette, it compliments the cod croquette perfectly. This is a great entrée to wrap the summer up with.
