Quesadillas! Yes, yes, and yes. This week we have a smoky chipotle chicken quesadilla for you to savor. Roasted chicken is hand shredded and folded into a sauteed red onion, garlic, minced chipotle pepper, and tomato sauce. The chipotle chicken mixture is then placed into a flour tortillas along with Monterrey jack cheese and griddled until the cheese melts. Each bite of this quesadilla is packed with chicken, tomato and smoky chipotle. Don’t worry it is not spicy, but a touch smoky. We paired a Southwestern orzo salad with this meal. Tender cooked orzo is combines with diced tomatoes, black beans, corn, cilantro, and sliced avocado; then dressed in a fresh buttermilk dressing. That dressing is made up of sour cream, mayonnaise, chili powder, red pepper flakes, lime, and buttermilk. There is so much texture in this salad, we love it. What a duo!
