Rule one: every meal should be delicious. Check. These chili cheese black bean enchiladas are meatless and decadent. Diced onions are sautéed with black beans and seasoned with cumin, oregano, minced garlic and chili powder. Once the onions are golden cream cheese, salsa and cheddar cheese are added in; and the enchilada filling has taken shape. A homemade red enchilada sauce holds each of the flour tortillas that are filled with the black bean mixture, then more enchilada sauce is poured over them. The enchiladas are topped with more cheese then baked until fragrant. A side of chili garlic roasted broccoli has been paired with the enchiladas. After one bite you will forget this is a meatless meal.
