Keep your summer going on track with this chicken entrée. Tender chicken breast is seasoned with lemon, garlic and oregano; then grilled to perfection. It is so very Greek. We paired the chicken with a luscious zucchini and bell pepper gratin. The gratin is made up of sautéed zucchini slices that is topped with a ragout of more zucchini, onions, garlic, tomatoes, and bell pepper. It is then seasoned with mint, oregano and basil. Each slice of the gratin is topped with shaved parmesan and then baked. Together these two items make for one fantastic meal to devour out on the deck tonight.
