These croquettes are pan sautéed until golden brown and served with a apricot mango sauce. We paired the croquettes with our baby spinach salad that has mango, candied pecan and goat cheese; all tossed in a balsamic vinaigrette. This combo meal is perfect for lunch or dinner this week.
