Chicken and Mushroom Fricassee with Kale and Apple Salad with Pancetta and Candied Pecans

Nothing says winter is here then a hearty batch of chicken and fricassee; aka a white chicken stew. Just think of a pot pie with out the crust. This fricassee start out with a chicken breast being sautéed with minced shallots and sliced mushrooms. Once the mushrroms and shallots are golden the pan is deglazed with white wine and chicken stock is added. The chicken and mushrooms simmer for a bit allowing the flavors to meld. Lastly the fricassee is finished with a touch of heavy and minced tarragon. What a meal to dig into at work. This is defiantly get heads turning. A kale and apple salad with crispy pancetta, candied pecans and a light vinaigrette accompanies the fricassee. What a duo!
