Cardamom Chicken over Rice Pilaf with Lemony Waldorf Salad

Liven up your midweek dinner or lunch with this Indian-inspired chicken dish. Chicken thighs are seasoned with ground cardamom and then roasted until golden brown. If you have never had cardamom think of it as cinnamon’s cousin. It is not spicy, just floral and warming. Just to keep it easy serve the cardamom chicken with rice pilaf. The pilaf has sauteed onions and raisins in the rice that is cooked in a chicken stock and apple juice broth. The chicken also comes with a lemony Waldorf salad comprised of chopped romaine, frisee, toasted walnuts, sliced celery, radishes, raisins, apples, and a light walnut lemon vinaigrette. This is a very Netflix worthy meal.
