Cannellini Bean and Ham Stew with Kale and Apple Salad with Cheddar

Warm up today with a bowl of our cannellini bean and ham stew. It has all of the essential fall elements to it. Cannellini beans are cooked along side potatoes, leeks, celery, carrots, parsnips and cabbage until tender in a smoky ham broth. Once the veggies are tender diced ham is added to the stew. Once you are ready to serve be sure to place the toast in the stew and top with shredded cheddar cheese. Yum! We paired this entrée with a kale salad that has fresh Michigan apples and shredded cheddar cheese then dressed in a light cider vinaigrette. Our cider vinaigrette is made up of Dijon mustard, sugar, olive oil and apple cider vinegar. Slightly tart, but pairs well with the fresh apple slices and shredded cheddar. The flavors and textures in this combo meal are amazing. What an essential fall meal.
