This is a very winter minestrone-esque soup, but you get farro instead of pasta. In each spoonful of this cabbage and kale soup you will find shredded cabbage, kale, diced pancetta, diced onion, tender farro and chopped garlic. All slowly simmered in a chicken stock seasoned with thyme, rosemary, anchovy paste and parsley. It is light, delicious and surprisingly hearty. Don’t forget to top the soup with some grated parmesan cheese and you are good to go for the rest of your day.
