Feel like you have been whisked away to France with this meatless crepe meal. A perfectly Parisian buckwheat crepe is filled with sautéed cherry tomatoes, minced garlic, leek and fresh corn kernels. All seasoned with a hint of paprika and garnished with tangy goat cheese and minced herbs. Simply delicious. We paired a serving of our summer ribollita soup with the crepe. The summer version of ribollita is lighter and it features yellow squash, tomatoes, green beans, onion, and swiss chard; all slowly simmered in a vegetable stock seasoned with garlic, fennel seeds and smoked paprika. Close your eyes after one bite of this meal and you will actually believe you are in Europe.
