The beans are cooked with fresh tomatoes and seasoned with cumin and coriander. Top your potatoes with a dollop of sour cream and fresh cilantro. To go along with your Mexican-inspired sweet potatoes we added an arugula salad with clementine segments, diced avocado, mint, feta and jalapeno vinaigrette. What a combo meal! There is enough food to break this meatless meal into two servings. Yum!
