Celebrate the summer’s harvest with our Italian-inspired beef stuffed zucchini. A zucchini is cut in half, scooped out and filled with sautéed ground beef, diced zucchini, olives, bread crumbs, and parmesan cheese. The halves are then topped with a homemade tomato sauce and mozzarella cheese; then baked. This entrée is better than pasta, no really it is. Serve the stuffed zucchini a top a bed of our fresh corn salad that is comprised of fresh corn kernels, minced onion, and torn basil; dressed in a cider vinaigrette. A beautiful summer meal.
