Gonna be completely honest here. There is enough food here for two meals. So you can have the stew for dinner and then the salad for lunch or reverse the two. Our beef stew is made from scratch with tender chunks of beef simmered in a beef stock with onions, carrots, peas and potatoes. We paired a spinach salad to go along with the stew. The salad has baby spinach, sliced red onion, shredded carrot, blue cheese chunks, pecans, hard boiled eggs, and diced roasted beets; all topped with a blue cheese dressing. A solid meal for you to dig into this week.
