Zucchini and Spinach Soup with Barley, Coriander and Watercress

Think green! Think about this delicious zucchini and spinach soup. Diced zucchini are butter sautéed with minced shallots and ground coriander. Once tender, vegetable stock is added and the soup is allowed to come to a simmer.  The zucchinis soup base is pureed until smooth then baby spinach, parsley and yogurt are added. Serve the soup hot and garnish with the cooked barley and watercress. This fragrant zucchini and spinach soup is light, but surprisingly filling. Keep warm with this soup. Enjoy!
