Craving Chinese takeout? We all do. So, get your chopsticks ready for this vegetable and toasted cashew stir-fry. We start off by sautéing the garlic with the red pepper flakes, and cashews; then put aside. The mushrooms are stir fried with the scallions until golden brown then the shredded napa cabbage and broccoli florets are added. A glaze is poured over the stir fry that is made up of oyster sauce, soy sauce, vegetable stock and cornstarch; this sauce thickens and the stir fry takes shape. The cashews are added back to the veggies stir-fry and top a bed of steamed rice. With this entrée on the menu this week, you can stay in and binge watch Netflix.
