Your meatless Monday dish of the week is here! This three cheese baked pasta dish is screaming your name. A medley of shiitake, cremini, and oyster mushrooms are sautéed with minced garlic and onion until tender. Next we make a cheesy béchamel sauce with smoked mozzarella, fontina and parmesan cheese, then fold in the mushrooms and cooked baked. We top the pasta with more parmesan cheese and bake until all the flavors blend and the cheese melts. The only thing that could make this meal more delicious is pairing it with a serving of tender crisp asparagus with browned butter. So much delicious!
