Thai-Style Shrimp and Halibut Curry over Steamed Rice

We are craving a Thai inspired curry this week. So, we decided to create this shrimp and halibut curry. The stew starts off by sauteing fresh ginger, shallots, bell peppers, and red curry paste; then coconut milk and fish sauce are added and the curry base begins to simmer. Lastly we add the shrimp and the halibut pieces to the curry to cook and it is finished off by seasoning it with some fresh lime juice and cilantro. Serve the curry a top the rice and enjoy. This aromatic curry will make you feel like you are on the beach. Yum.
