Change up your soup game with our Thai-style curried butternut squash soup. This light, creamy, smooth and nutty soup is just what the doctor ordered. Diced butternut squash, sliced onion and garlic are sautéed and then seasoned with coriander, cumin and red curry paste. We add vegetable stock and bring the soup to a simmer. Once the veggies are tender, the soup is purred until smooth then seasoned with lime juice and coconut milk. Serve each bowl of soup with toasted coconut and chopped cilantro. Enjoy!
