Spice up your mid week blues with this aromatic Thai squash soup. The soup starts out with roasted butternut squash that is then added to chopped onions, minced garlic and ginger. This is then seasoned with red curry paste and brown sugar. Next chicken stock and coconut milk; and the soup is brought to a simmer.  There are so many layers of flavor to this delicious soup. Garnish with the sautéed shrimp, toasted coconut, cilantro and lime. This soup will warm you in more ways than one. Enjoy!
