It is definitely one that will shake up and wake up your tastebuds. No it is not spicy, in fact it is creamy, nutty and have the right amount of spice to it. So, don’t worry. The curry is made up of sautéed onions, garlic, ginger and Thai-red curry paste; then we add coconut milk, peanut butter and diced sweet potatoes. Once the sweet potatoes are tender we fold in spinach and finish the curry with a squeeze of lime. Serve each helping with our steamed rice and garnish with roasted peanuts.
