The summer version of ribollita is lighter than the winter version we are all accustomed to. Summer ribollita features yellow squash, tomatoes, green beans, onion, and swiss chard; all slowly simmered in a vegetable stock that is seasoned with garlic, fennel seeds and smoked paprika. Yum. It is super light, jam packed with summer veggies and is slightly smoky. If you close your eyes after one bite, you will actually believe you are in Europe.
