Here is a unique, but delicious salad for your Thanksgiving celebration. This Southern inspired salad is made up of tender roasted sweet potatoes and red potatoes folded in with sautéed okra and spinach. The potato and vegetable mixture is then dressed in a mustard vinaigrette and garnished with capers. The salad is packed with texture. We love the sweetness from the sweet potatoes plays off of the okra and capers. This is a light, but hearty salad that should have its own spot for your thanksgiving.
