A perfect soup for a winter’s day. We roast cauliflower florets and onions until golden brown, then add them to a chicken stock base along with carrots and celery. The veggies are cooked until tender and then the soup is pureed. Just the right combination of flavors make this soup work. We love the caramelized cauliflower and onion. To make the cauliflower soup even more delicious we garnish the soup with prosciutto almond breadcrumbs. Yum!
