Pork Chops with Apples and Cider with Cauliflower-Cheddar Gratin

Celebrate the fall with this everything autumn meal. Apples, cider, pork and cauliflower, oh my. The pork chops are pan sautéed until golden brown with sliced apples and then sauced with a creamy cider reduction. This French-inspired sauce is made up of hard cider that is reduced with chicken stock and apple brandy, seasoned with Dijon, chives and parsley and then finished with crème fraiche. The pork is served along side a hearty helping of creamy cauliflower cheddar gratin. What a delicious duo.
