We are all getting ready for grilling season. This pork with Chimichurri sauce will make you feel like it is already June. We lightly season a pork tenderloin with salt and pepper, then grill it to medium rare. The pork is then sliced and served with a traditional Chimichurri sauce. Our sauce is made up of chopped parsley, minced garlic, red wine vinegar, olive oil, lemon juice and oregano. The sliced pork is served with a side of roasted potatoes drizzled with a garlic aioli. Nothing beats a fantastic grilled meal, especially when you get to savor it at work.
