Change up your menu this week with our polenta tamale pie. This based casserole starts out with ground beef being sautéed with salsa and refried beans; then seasoned with chili power and cumin. The seasoned ground beef mixture is then topped with polenta and cheddar cheese before it is baked. Once the cheese has melted the pie is ready to serve. Each bite is jam packed with beef, salsa, polenta and cheese. You may even want a tortillas chip to dunk in it. We paired a Mexican-inspired chopped salad with the tamale pie. The salad is made up of chopped romaine, tomatoes, cabbage, jicama, corn, avocado, and feta. It is then topped with a tomatillo, cilantro, jalapeno and lime juice dressing. Zippy, fresh and delicious. Together this duo is ready to take on dinner or lunch any day of the week.
