Pickle-Brined Chicken with Sauteed Swiss Chard

It sounds crazy, but this is totally delicious. Yes, we brine the chicken in pickle juice overnight then pan sear until crispy golden brown. We serve the chicken a top of a bed of sautéed swiss chard that is made up of onions, garlic, carrots and celery; then deglazed in white wine. A perfect light mid-week meal. Oh, so back to the pickle brine. We use it because it seasons the chicken and keeps it extra moist while cooking. You are going to be shocked after one bite. Order two you will be craving this chicken dinner.
