Nothing beats a bowl of our classic Italian pasta e fagioli zuppa, aka pasta and bean soup. The soup has sauteed leeks, onions, carrots and garlic all simmered in a homemade chicken stock base along with a smoked ham hock, diced tomatoes and a parmesan rind. As the soup slowly simmers, all of the flavors begin to meld. Lastly we add chopped kale, tender cannellini beans and pasta to the soup . Serve each bowl of the pasta e fagioli soup with extra parmesan cheese and a slice of your favorite bread. This is one soup that will get you through the last part of the winter.
