A beautiful soup for a spring’s day. Our minty pea soup starts off by sautéing onions and then we add fresh peas and a vegetable stock. The soup simmers for several minutes then fresh chopped mint and parsley are added. Next we add some sour cream for richness and lastly the soup is pureed until smooth. The minty pea soup is so fresh and floral. Totally appropriate for one to enjoy  the season. You can also serve this soup warmed or chilled. Your choice.
