Here is a great twist to add to your taco Tuesday. Our Mexican style meatloaf will be sure to fill your south of the border cravings. Ground sirloin is mixed with cheddar cheese, onions, bell pepper, minced garlic, cumin, chili powder, cayenne, breadcrumbs, and eggs. The loaf is then topped with a fresh salsa and sour cream sauce and then baked. The meatloaf is served sliced along with more salsa and sour cream. We paired the meatloaf with a roasted poblano potato salad. A zippy addition to go along with your dinner.
