The stew’s aromatic base starts out with minced ginger, garlic, shallots, dried chilies, madras curry powder, curry leaves, and kiffir lime leaves; then we add carrots and sliced fennel; sauté a bit longer. Lastly the coconut milk is added and the mahi-mahi pieces and a splash of citrus. The stew is served with a side of curried cauliflower and green bean salad.
