Louisiana-Style Jambalaya over Steamed Rice

What? Jambalaya! Yes, get the table set for our cajun inspired jambalaya meal. This classic Louisiana dish starts off with diced onion, shallots, celery and bell pepper being sautéed until golden. This vegetable base is then seasoned with garlic, smoked paprika, and cayenne. Next diced chicken thighs are added to brown along with the Andouille sausage. Once the chicken and sausage are seared, diced tomatoes and chicken stock are poured in and the jambalaya is brought to a simmer. Before the cajun stew is ready to serve, shrimp are tossed in to quickly poach. Serve the jambalaya over steamed rice and garnish with parsley.  Each bite is jam packed with NOLA flavor. We love the smokiness of the Andouille with the tender pieces of chicken and shrimp. YUM!
