A classic Waldorf salad has been modernized. A traditional Waldorf salad has diced apples, celery, walnuts and grapes all folded into a mayonnaise, here we have taken the elements of this salad and modernized it. A bed of chopped romaine and frisee holds toasted walnuts, sliced celery, radishes, raisins and apples. The salad is then dressed in a light vinaigrette made up of lemon, white wine vinegar, walnut oil, minced shallot and cumin. No mayo here. Look forward to a bright, crisp and nutty salad.
