To cheer you up this week we have made one of our favorite pancake recipes. Our lemon ricotta pancakes are pancakes you can only dream about. They are made up of whipped ricotta cheese, lemon zest, lemon juice, eggs, milk and flour. So light and fluffy. The pancakes are paired with a gooey caramelized apples side and a portion of maple syrup. All you need to do is add any extra butter. To round out your breakfast we added grapefruit and orange segments steeped in a spiced star anise syrup. Yum…. In other words it is going to be a good morning for you!
