Indian-Style Cauliflower and Potatoes with Steamed Rice with Sauteed Green Beans with Coconut

Add a bit of spice to your week with our Indian-inspired cauliflower and potato curry. This dish is also known as “aloo gobi” and it starts out with minced garlic, ginger and serrano pepper being sautéed until aromatic. Next ground coriander, turmeric, and cumin are added to season the base of the curry. Cauliflower florets and diced potato are added along with some water, then the curry simmers until the vegetables are all tender. Serve the vegetable curry a top a bed of steamed rice, garnish with cilantro. This meal is not too spicy, if you think it is add a dollop of plain yogurt to take off the edge. The curry also comes with a serving of tender crisp green beans sautéed with toasted coconut. What a meatless meal to devour at work and make your coworker’s jealous.
