The mahi-mahi filet is topped with a feta cheese, fresh mint, dill and mayonnaise sauce and garnished with sliced lemons. Grill the fillets to perfection and serve with the tomatoes tossed in a red wine vinaigrette. Oh, and don’t forget the orzo salad. It pairs well with the mahi in that salad you will find tender cooked orzo, feta cheese crumbles and chickpeas; all tossed in a lemon-dill vinaigrette.
