Our farro grain salad is filled with plump raisins, dried tart cherries, toasted pistachios, freshly grated ginger, fresh mint, cilantro, orange juice, lemon juice and olive oil. Yum! We decided to pair this salad with a twice baked sweet potato. These sweet potatoes are roasted, peeled and then the skins are stuffed with mashed sweet potatoes seasoned with brown sugar, butter, cream cheese, cinnamon, nutmeg and ginger. Simple, straight forward and delicious. Great for any night of the week.
