This salad is not very complicated, but it is packed it flavor. Chopped escarole, Belgium endive, and apple slices are tossed in a cider vinaigrette. In that vinaigrette you can find minced shallots, cider vinegar, Dijon mustard, honey, and olive oil. This salad pairs well with any of the entrees we offer this week. We love how bright and fresh this salad is.
