How is this soup so delicious, but so simple? We totally love this creamy roasted carrot soup. It is made up of roasted carrots, onion and garlic that are then slowly simmered in vegetable stock. Once the carrots are tender the soup is pureed and seasoned with coriander, lemon juice, cumin and butter. The spices add a bit a warmth to the soup and both the butter and carrots add the richness. Be sure to have your favorite bread nearby to dunk in this one. This carrot soup is ideal for lunch or to accompany any of our meals this week.
