Corned beef salad? Yes, don’t pass by this crisp and beefy salad. Slices of corned beef top a bed of iceberg lettuce that is then dressed in a homemade thousand island dressing and toasted rye bread croutons.  The thousand island dressing is made up of mayonnaise, ketchup, pickle relish and chopped hard boiled egg. A great salad to have for lunch this week. Oh and it comes with a cup of Hungarian-style mushroom soup. The soup starts off with sliced mushrooms and onions sautéed in butter; then seasoned with dill and paprika. Chicken stock and milk are added, then the soup comes to a simmer to allow the flavors to meld. Lastly the mushroom soup is seasoned with lemon juice, parsley and sour cream. This is a great meal that you can split into lunch and dinner or just have it all at one sitting.
