Corn Chowder with Bacon and Scallops

One of our favorite summer soups is this corn chowder. It is made with fresh corn right off the cob. The corn is sautéed with bacon, onion, celery and a touch of flour. Milk and heavy cream are added and the soup is brought to a simmer. Lastly, diced potatoes are added to the chowder; once the potatoes are tender the chowder is lightly pureed. Serve the chowder hot and garnish with the seared sea scallops. The chowder is smoky, creamy and fresh and stock full of corn. Add a touch of hot sauce if you must. Enjoy.
