Chicken with Cilantro, Mint and Chiles over Cauliflower “Rice”

Another delicious Mexican-inspired dish has been prepared for you. These chicken thighs are seasoned coriander and seared, then they are slowly braised in a verde sauce made up of blended cilantro, mint, poblanos, onions and jalapenos. This salsa verde braising sauce gives the chicken so much flavor. Before the chicken is fork tender, a touch of cream is added to the sauce for richness. In the end the chicken comes out fork tender and the herb chilies sauce is fresh, bright and has a small amount of heat to it. Just to keep the dish a bit lighter we paired a cauliflower rice to go with the chicken. A great combination for a winter’s day.
