Chicken with Carrots and Olives over Couscous

Sometimes you are just in the mood for something different. Look no further. This Middle Eastern inspired meal starts off with a pan seared chicken chicken breast that is combine with sautéed onions, carrots, tomatoes and garlic. The carrot and tomato ragu is seasoned with paprika, cumin, and cinnamon. Once fragrant, we add chopped green olives to the ragu. Serve this chicken meal piping hot with the side of couscous and top with toasted almonds. A light dish for a warm spring’s eve.
