Chicken-Fried Cauliflower “Rice” with Thai-Style Carrot and Sweet Potato Soup

Craving fried rice? Ah, well we sure are. So, we came up with this fried “rice” entrée. Our “rice” actually is riced cauliflower. The cauliflower is sautéed with garlic, ginger, scallions, and carrots. Once tender we scramble the eggs in the pan with the “rice” fold in the shredded chicken breasts and season with soy sauce and sesame oil. You would never know, but you do that the rice is not there. The chicken fried “rice” come with a helping of Thai-style carrot and sweet potato soup. A pureed soup made up of carrots, sweet potatoes and onions; all slowly simmered and seasoned with ginger, red curry paste and almond butter. It is sweet, spicy and oh so delicious. Top each serving with a squeeze of lime and chopped cilantro. Order two. Surprise your friend.
