Feel like you have been whisked away to the streets of Marrakesh with this Moroccan-inspired chicken tagine. These fork tender chicken thighs are cooked with chickpeas, onions, garlic, and apricots in a homemade chicken stock seasoned with toasted cumin, coriander, paprika, turmeric, ginger, cinnamon and cayenne. Each bite is so aromatic and delicious. To keep this entrée light we paired it with a tangy cabbage slaw. The slaw has plump golden raisins, shredded cabbage, carrot slices and saved red onion all tossed in a red wine and mustard vinaigrette. Order two meals and surprise a friend for dinner.
