One of the things we love about the spring is the abundance of fresh asparagus. In this French inspired dish we pan sauté a boneless skinless chicken breast until golden brown then top it with a sauce made up of shallots, sour cream, white wine, blanched asparagus, grated gruyere cheese, and chicken stock. A creamy sauce that will delight your palate. We paired a baked mushroom rice with the chicken. The rice has both sliced shiitakes and button mushrooms. This is another dish that will make your taste buds dance.
