The name of this salad does not give it justice. It is more then just plain old carrots and avocado. The carrots are sliced and oven roasted, allowed to cool and then tossed in a grapefruit vinaigrette that is seasoned with coriander. Sliced avocado and chopped parsley are added to the carrots and the salad is finished with chopped almonds. This carrot salad defiantly steps your salad game up a notch.
